the reason that i have written two books on basically the same subject, pubs and restaurants.
very few publicans will read a book on restaurants if they are buying a pub, very few restaurateurs will read a book on pubs if they are buying a restaurant. there is a lot of business commonality in both fields which i have included in both books, but having owned both pubs and restaurants, prioritised the key information in both.
both businesses can be vastly different, depending on the way that you run them, yet a gastro pub/bistro is a pub doing very good food.
