In recent years, there has been a growing interest in microelements, as their presence in foods is the indicator of qualitative parameters such as processing conditions, environmental pollution, sanitation and husbandry, and may affect the chemical and functional properties of milk. Elements such as Pb, Cd , Al, are important as they can contaminate foods from the tools and machines used in the production of dairy products.The present work was designed to throw some light over the concentration of Lead, Cadmium and Aluminum in market butter and ghee, as well as to study the effect of frying and manufacturing process of some dairy products on the concentration of the estimated heavy metals in such products.
